Maybe it’s just the comedown from a really lovely snow filled weekend ✨Not only did we go on some great walks, but Rich and I made homemade sushi and I finally got my ninjakitchenuk AIR FRYER! 👏🏻👏🏻👏🏻

Behold- a brunch to rule all brunches, with all the trimmings of a filling meal 😌 avocado sliced perfectly, 2 poached eggs with a runny yolk, and Richards speciality (yes- he does it better than me) thyme and honey halloumi 🙏🙏
But the real star of the show are these hash browns I made using my ninjakitchenuk food processor with the grating attachment. Seriously effortless!
SWEET POTATO HASHBROWNS
(Gf, V, DF, NF)
-3 sweet potatoes, grated
-1 red onion, grated
-1 cup GF flour (I used dovesfarm)
-1 tbsp oregano
-1/2 tbsp paprika
-1/2 tbsp thyme
-a glug of olive oil
-pinch of salt & ground pepper
1. Add all ingredients to a bowl. Using an ice cream scooper place the mix on a tray. Press each one down into a patty. Bake for 15-20 minutes at 220°C until browned!
