Light, creamy, slightly sweet and aromatic, oh and like, super good for you 😅 this recipe is filled with exquisite flavours like cardamom, and vanilla 🥰
I used to make this all the time for Rich as a healthy quick dessert, but a few pretty glasses and some fresh pomegranate made this one heck of a sophisticated palate cleanser. I made a whole batch for a mini (social distanced) get together my mom recently had with friends. It. Was. A. Hit💥
🚨 I’ve made this dairy free and dairy based and honestly, the dairy free version using coconutcollab coconut yogurt and plenishdrinks cashew milk was creamier than the dairy 🤭 It’s a winner in our books!
SAFFRON & HONEY INFUSED YOGHURT
-2 generous pinches of saffron
-2/3 cup cashew milk (or dairy milk)
-1/4 tsp ground cardamom
-1/2 tsp vanilla
-1/2-2/3 cup honey (depending on how sweet you’d like it)
-750 g coconut yogurt (or Greek)
-toppings: pomegranate seeds and chopped pistachios
1. Put a dry pan over medium heat, and add the saffron, toasting until fragrant.
2. Pour the milk in the pan, add the cardamom and vanilla. Bring to a light simmer, allowing the saffron colour to infuse into the milk.
3. Take off heat and add in the honey, and stir. The mix should have a ‘glossy’ texture and look to it.
4. Place the yoghurt in a bowl with a strainer on top. Pour over the honey/saffron infused milk and mix until fully combined.
Top with pomegranates and chopped pistachios and leave in the fridge to cool even more or eat straight away!
