Hello! 👋 I’m back from my hiatus. Between grieving, staying with Richards parents and our trip up north to the Lake District (oh and exams!) its been a busy time!

Thankfully, we have coffee & HEALTHY BREAKFAST APPLE CRUMBLE to get us up in the morning 🍎 🍂🍁

Easy, sweet, crunchy and literally tastes like how cozy feels 🥰 How much can I bet you have all of the ingredients to make this in your kitchen?

BREAKFAST APPLE CRUMBLE

🍎 APPLE MIX
-6-8 apples (I like using red- any variety)
-1 tsp vanilla
-1 tsp cinnamon
-1/4 tsp nutmeg
-1/4 tsp ground cardamom (optional)
-2 cloves (optional)
-1/4 cup maple syrup (or honey)
🌾 CRUMBLE
-1 cup GF oats
-1/4 cup GF flour (or oat flour)
-1/4 cup almond flour
-1/4 cup maple syrup/honey
-1/4 cup coconut oil
-1/2 tsp cinnamon
-1 tsp vanilla
-pinch of salt

1. Preheat oven to 180C.

2. Peel your apples. Cut into thin slices and place in a bowl. Add the cinnamon, nutmeg, cardamom, cloves, vanilla and maple syrup. Combine well and place in a shallow casserole dish

3. Mix the oats, flour, almond flour, maple syrup, cinnamon, vanilla, salt and coconut oil in a bowl. Sprinkle the oat mix on top of the apples. I prefer it slightly ‘chunky’ rather than the whole top covered, I invite you to experiment!

4. Place in oven for approx. 30 minutes or until the oat mix on top is browned. Remove from oven and top with coconut yoghurt! ✨
