Happy…. Thursday? Seriously how is it ALREADY Thursday? 🤪

I’ve been making our dinner stupidly early to beat the sunset (which feels like it’s at 2 o’clock atm 😅) so I can have some light to take some sort of photo! I’m too cheap to buy artificial light so I’m trying to use what’s free (also- think of the storage!)

I’m glad I was able to get some light to shot this SAGE & HONEY SQUASH because it’s seriously my favourite winter side dish ever! 🌱

Sweet, salty, smokey and ultimately savoury (also, takes like 20-30 min max! Worth a save 🎃)

SAGE & HONEY SQUASH
(GF, Ve, VO, DF)

-2 acorn squash, peeled and cubed
-4 cloves smoked garlic,minced (can sub regular garlic)
-1 stem sage
-3 tbsp honey (can sub maple syrup)
-3 tbsp olive oil
-a generous pinch of salt

1. Preheat oven to 200C

2. Toss all ingredients with squash and place on a lined baking tray

3. Put in oven for 20-30 minutes or until squash is crisping, soft and fragrant (I like mine extra crispy!)

We serve this as a side dish but it’s also a fabulous salad or bowl topper 🥰🥰 ENJOY 🎃
