Rich and I had a great weekend post quarantine relaxing and going on long walks! And believe me, these walks felt very long because I made the mistake of wearing new shoes for one of our adventures and Rich has to carry me home 😂 I’m an absolute princess!
The only reason he puts up with me is because of weekday meals like this white miso marinated cod loin 😯
Flakey, moist, melt in your mouth and the perfect blend of sweet and Unami this is the easiest ‘impressive’ meal you could make your significant other 🥰
We’ve been on a rice kick over here, buying bags by the kilo and a nice sticky rice with sesame pairs so well with the miso cod. We roasted the broccolini with the cod to keep the dishes minimal and whipped up a quick gochujang sauce on the side 🌶
BTW- I couldn’t find my favourite kimchi anywhere 😢 obviously my great free marketing for them has worked but save some for me please 😂
WHITE MISO MARINATED COD LOIN
GF, P, DF, NF
-2 cod loins
-4 tbsp white miso
-2 tbsp mirin
-2 tbsp coconut sugar
-1/2 tsp apple cider vinegar
-1-2 tbsp sesame oil
-add 1 clove grated garlic and a thumb of grated ginger as optional flavour booster!!
1. Mix all the ingredients together until fully immersed. In a air tight container coat the cod entirely with the miso and refrigerate for 1 hour.
2. Preheat oven to 220C. Bake for 13 minutes or until flakey in centre!
Serve hot and enjoy with rice and veggies 🥦
