Where did the weekend go? I swear yesterday was Friday πŸ˜… does time speed up with age? I seriously don’t know where the weekend went and honestly, I’m in need of some Monday motivation so here I go introducing the best go-to 15 minute weeknight dish πŸ‘πŸ»πŸ˜Œ

You’ve probably seen this PEANUT SATAY VEGGIE STIR FRY at least once a week on my stories. It’s so satisfying, fulfilling and the quickest recipe to make when I’m just not feeling it in the kitchen.

It’s simple ingredients too- all I use is whatever veggies I have in the fridge (sometimes I buy a stir fry mix), peanut butter, hot sauce, maple syrup, sesame oil and tamari (soy sauce). Simple as πŸ‘ŒπŸ» and can be used a dipping sauce too! BONUS 😊

I topped this with egg but it’s perfect with prawns, yellowfin tuna and whatever else needs to be used up in the fridge! I even added leftover salmon the other night and it was superb! I’ve had this with sesame broiled potatoes, but often we have this served with a gorgeous scoop of wild rice 🍚

PEANUT SATAY STIR FRY SAUCE
(GF, V, DF, RSF)

-1/4 cup manilife_ peanut butter (I like chunky)
-2 1/2 tbsp kikkomanuk tamari (GF soy sauce)
-2 tbsp maple syrup
-2 tbsp sesame oil (adjust for desired consistency)
-1 tsp hot sauce (I use gochujang; adjust to personal taste)
-squeeze of lime

1. Combine all ingredients, taste as you go to adjust for your personal taste (can be as spicy and thick as you’d like! It’s such a versatile recipe) and enjoy ☺️
