Gorgeously gooey chocolate chip oatmeal breakfast cookies 😏

Ohhh yea, you heard that right 😍👀

Ask Rich, or my family and they will tell you that more often then not they wake up to the smell of ‘banana bread’ and dozens of these little bites in the morning.

These are quick to make (20 min tops!) fulfilling and basically oatmeal living it’s best life 💃🏻

I’ve made this recipe many times before and it’s even on my blog, except I usually omit the chocolate chips and press a square of montezumaschocs absolute dark chocolate in the center 😋 that version is on blog under ‘Banana Chocolate Oat Thumbprint Cookies’

CHOCOLATE CHIP OATMEAL BREAKFAST COOKIES (GF, VE, V, NF)

-2 ripe bananas
-2 cups of oats
-4 tbsp maple syrup/honey
-2 tbsp melted coconut oil
-1/4 cup enjoylifefoods chocolate chips
-1 tsp vanilla extract
-a sprinkle of cinnamon

1. Preheat oven to 375F/180C. Mix all of the ingredients together in a bowl. Let sit for approx 10 min. Scoop out into a tray and form into rounds (I use a ice cream scooper!)

2. Put in oven for 15-20 min.

Allow to cool until just palatable and then eat as many as you can! These won’t last long 😅

PSA: I totally also turned these into ice cream sandwiches… just to pop that idea into your head 💡 😏
