Creamy and dreamy smashed chickpea and dill salad 🌿

Who else is finding dill to be their ultimate summer herb this year?? 🌞 I seriously never used it until a random craving a few months ago for dill pickle popcorn 😅
I made this pre-hike for my family and they were all hesitant to try (as they are with any vegan alternatives) and next thing you know, bam! 💥 everyone’s fighting for the last bites!
We had this with sanissimousa Salmas crackers (so fab!) but I’ve also put it in a sandwich, wrap or eaten it entirely on its own.
CREAMY & DREAMY SMASHED CHICKPEA & DILL SALAD
-1 can of chickpeas, drained and rinsed
-1/4 cup yourheart vegan mayo
-2 heaping tbsp dried or fresh chopped dill
-2 celery stalks, sliced
-2 spring onions, sliced
-1/4 tsp salt
1. Take a potato masher and smash the chickpeas roughly (not fully into a paste, keeping some whole for texture)
2. Add the vegan mayo, celery, spring onion, dill and salt. Mix and combine well. Serve cold!
Top Tip: this keeps so well in the fridge. I have batch made for lunches up to 3 days in advance! 🌿🌿
