Christmas dinner for me has always been turkey with ALL the trimmings! My mother used to make a homemade mushroom gravy at times but otherwise, it was a pretty meat heavy festive meal! For a vegan main at Christmas, it’s often tough to find the right vegetables to replace that special and traditional turkey.

This is where mushrooms take the spot light with their meaty texture and ability to take on flavour. These portabellos were scored and marinated in a reduction of whiskey, maple syrup and lots of rosemary🌿

Paired with a creamy, light winter turnip mash… you’ve got a quick & easy vegan option for Christmas (or really anytime you want to impress 😏)

Marinated Portabellos
(DF, V, GF, NF, P)

🍁 1/2 cup whiskey
🍁 1/2 cup maple syrup
🍁 3-4 springs rosemary (or sub thyme/sage)
🍁 4 portabello mushrooms, scored

Bring the whiskey, syrup, and herbs to a boil in a saucepan. Reduce to a simmer and boil until 1/2 way reduced. Pour over scored mushrooms and leave to marinate for an hour. These are best cooked on a BBQ but can also be brilliant in the oven for 25-30 min at 220Β°

Winter Turnip Mash
(GF, DF, V, NF, P)

🍁 6 turnips, peeled and cubed
🍁 4 potatoes, cubed (option to peel)
🍁1/2 cup cashew milk
🍁 pinch herbs de Provence
🍁 pinch of fleur de sel

Boil the turnips and potatoes in salted water until tender. Drain most of the water away, reserving some in the pan. Mash until smooth and add your cashew milk, salt and herbs. Mix until combined and serve hot ✨
