Hence- Pumpkin Spice Freezer Chocolate Cups 🎃
Gooey and spicy in the centre, decadently smooth chocolate on the outside, these melt in your mouth bites are exactly what motivated me to get up this foggy Monday morning 🍁
P.S. what’s up with there being an absence of pumpkin purée in UK grocery stores? I was sent to the ‘American’ food isle when I asked 😂 These little bites were even Richards first time having pumpkin flavoured anything and I was shocked!
PUMPKIN SPICE FREEZER CHOCOLATE CUPS
(GF, V, NF, P, DF)
-1/2 cup pumpkin puree
-1-2 tbsp coconut sugar
-1/4 tsp cinnamon
-1/8 tsp nutmeg
-1/8 tsp ground ginger
-1 tbsp coconut flour
-2 cups chocolate chips
-1 tbsp coconut oil
1. Line a cupcake tray with cupcake liners and place in the freezer.
2. Mix the pumpkin, spices and coconut sugar until smooth and fully combined. Add the coconut flour and let set in the fridge or the freezer while you melt the chocolate and coconut oil in either the microwave or a double boiler.
3. Using a spoon, put one spoonful of chocolate on the bottom of each cupcake liner. Roll about 1 tsp of the pumpkin mixture into a small disk and place in the centre of each chocolate lined base. Using another spoonful of chocolate, cover the pumpkin, ensuring all corners are ‘sealed’.
4. Place in freezer for at least 15-20 min. Sprinkle with flakey salt enjoy your sweet treat!
