Anyone else have a lockdown comfort food? Literally the only thing I’ve been craving is sour cream and chive popchips 🤪
Obviously I can’t eat those for EVERY meal but that doesn’t mean I can’t satisfy that craving. Hence, my solution 💡 👇🏻
Healthier SOUR CREAM & CHIVE mashed potatoes 😮
Tangy, garlicky, oh so savoury & fresh these have ALL the flavour without feeling to heavy 🌱
HEALTHIER SOUR CREAM & CHIVE MASH
-6 potatoes ( I used Maris piper)
– 1/2 cup Greek yoghurt (or coconut)
-3-4 garlic cloves (raw & minced or roasted)
-1-2 tbsp chives (fresh/dried)
-a good pinch of salt or two
1. Cut your potatoes into cubes (this reduces the cooking time significantly!). Place in a pit, cover with water and bring to a boil for 15-20 min or until tender.
2. Drain the potatoes, reserving some to use as a emulsion for the potatoes (and also to add extra nutrients!). Mash the potatoes, add the yogurt, garlic, chives and salt until completely blended.
Add more yoghurt and salt to taste and consistency 🥰
