Anyone else excited for stew season? 🧡

Let me set the scene- it’s raining, cozy overcast, you have finally pulled out your fall/winter sweaters from your wardrobe and you sit down with a big soup spoon and a loved one to THIS comforting bowl of happiness 🍁🍂

Made with fulfilling lentils, soft potatoes and sweet carrots this stew is deceptively simple with its spices taking the centre stage. Who doesn’t love notes of cardamom and soothing turmeric? ✨

CARROT, POTATO & LENTIL SOUL WARMING STEW

-1 glug cooking oil (coconut or olive oil)
-3 carrots, peeled and roughly chopped
-2 garlic cloves
-3 medium potatoes, cut into 1 inch cubes
-1 tsp cumin
-1/4 tsp ground cardamom
-1/2 tsp ground coriander
-1/2 tsp turmeric
-1/4 tsp cinnamon
-1 stock cube
-1 cup red lentils
-1 can tomatoes
-1 can full fat coconut milk
-1/2 -1 cup water
-salt to taste
-top with pea shoots

1. Add the carrot, garlic and potato to a deep pot with a glug of oil. Sauté for about 3-5 minutes before adding your spices and combining fully. Cook for 2 minutes until fragrant.

2. Sprinkle the stock cube into the pot, add your lentils, coconut milk and can of tomatoes. Bring to a boil. And reduce to a simmer. You may need 1/2 cup to 1 cup of water extra depending on how ‘soupy’ you would like your stew. Season at the end with salt to taste.

Top with pea sprouts or watercress 🌱
